Ultimate Superfoods Organic Peeled Cacao Beans
Cacao is harvested from an evergreen type tree found in deep tropical regions. This tree produces flowers in clusters which produce an oval shaped fruit called a cacao pod, which when ripened is yellow to orange. The pod contains 20 to 60 seeds, usually referred to as “beans” Our cacao is the native-born heirloom Ecuadorian species (Arriba Nacional-Fino de Aroma) surpasses the competitor’s hybrid (CCN51) cacao varieties in aroma, flavour, nutrient and mineral content.
Our farmers nurture the trees, hand pick the cacao pods, and separate the beans for fermenting. After a carefully controlled fermentation process, the cacao beans are sundried. They always maintain their nutrient and mineral integrity through sun drying rather than dry roasting. Many companies have been known to oven dry their beans to speed up the process in order to reduce their costs.

Ultimate Superfoods Organic Cacao Butter
Cacao Butter is the cream coloured fat extracted from cacao beans and used to add flavour, scent, and smoothness to chocolate, cosmetics, and tanning oils, and soaps.
Our Cacao Butter is created through a proprietary cold-pressed method. This process begins by cold pressing the nibs into a “cake” in such a way that the oil begins to separate from the protein and the fiber. The temperature is never allowed to exceed 104 degrees (F.).
Many other companies allow the temperature to rise as high as 300(F) to speed up the process. A high accuracy thermometer is used throughout processing. Slowly the pure liquid cacao butter begins to sift off into a stainless steel container where it is allowed to solidify into different shapes. Cacao butter melts at approximately 90 degrees (F).

Other cacao powders are exposed to temperatures as high as 300 degrees and are subjected to tons of oxidative pressure. This process yields more removal of fat from the powder to be used in the manufacturing of cacao butter, so you are left with only 7-10% fat which greatly compromises the flavour of the powder.
